The other week, we featured my friend Michael Anton in his kitchen, making a lamb demi-glace and discussing cooking. It was a hit, and we couldn’t wait to do more. Now, this video is a bit more practical—here, before the weekend, is a dish you can make at home without spending hours in the kitchen.

The French Omelette: Ingredients
3 Eggs
1 Tablespoon of Cream (Optional)
Gruyère Cheese
Flat-Leaf Parsley
Chive
Tarragon
Chervil (if you can get it, but it's hard to find)
Salt and Pepper
Kosher Salt
Butter
